Keto Milk Pudding (No Sugar, No Flour)

I usually make this pudding when I want something sweet but still keto-friendly. It’s creamy, light on the stomach, and very easy to prepare. This recipe does not use normal milk or sugar, so it stays low-carb.

Ingredients

  • 1 cup full-fat almond milk (unsweetened)
  • ½ cup heavy cream
  • 1 tablespoon butter (optional but makes it richer)
  • 1½ tablespoons erythritol or monk fruit sweetener (adjust to taste)
  • ½ teaspoon vanilla essence
  • ½ teaspoon cardamom powder (optional, for desi flavor)
  • 1 teaspoon gelatin powder (or agar-agar for vegetarian version)
  • 2 tablespoons cold water
  • A few chopped almonds or pistachios for garnish

Method

First, take a small bowl and add gelatin powder to the cold water. Mix lightly and leave it aside for 5 minutes. This step helps the gelatin bloom properly and avoids lumps later.

Now, take a non-stick pan and add almond milk and heavy cream. Keep the flame low and stir slowly. Do not let it boil. Gentle heating is important or the milk can split.

Add butter to the warm milk mixture and stir until it melts completely.

Next, add erythritol and keep stirring. It may not dissolve immediately like sugar, but that’s normal. With slow heat, it blends well.

After that, add vanilla essence and cardamom powder. Mix gently.

Now lower the flame further and add the bloomed gelatin into the pan. Stir continuously for 2–3 minutes until it dissolves fully. Make sure there are no grains or lumps.

Turn off the heat. Let the mixture cool for 2–3 minutes.

Pour the pudding into bowls or molds. Let it reach room temperature, then place it in the refrigerator for 2 to 3 hours until fully set.


Serving

Once set, garnish with chopped nuts.
Serve chilled.

The texture should be smooth, soft, and creamy — not rubbery.


Important Notes (From Experience)

  • Always use unsweetened almond milk
  • Do not boil after adding gelatin
  • If you want thicker pudding, add a little more cream
  • For chocolate flavor, add 1 teaspoon unsweetened cocoa powder
