🥄 Ingredients (Serves 2–3)

For the Chicken

  • 2 large boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp Italian seasoning (optional)
  • 1 tbsp olive oil or butter

For the Parmesan Stuffing

  • ½ cup freshly grated parmesan cheese (not powdered)
  • ¼ cup cream cheese (full-fat, room temperature)
  • 1 tbsp heavy cream
  • 1 small garlic clove, finely minced
  • 1 tbsp fresh parsley or coriander, finely chopped
  • ¼ tsp chili flakes (optional)
  • Pinch of black pepper

Optional Topping (Extra Keto Crunch)

  • 2 tbsp grated parmesan
  • 1 tbsp crushed pork rinds OR almond flour (optional but keto-safe)

🔪 Step-by-Step Method

1️⃣ Prepare the Stuffing

In a bowl, mix:

  • Cream cheese
  • Heavy cream
  • Parmesan cheese
  • Garlic
  • Herbs
  • Chili flakes & black pepper

Mix until smooth and thick.
👉 The filling should be spreadable, not runny.


2️⃣ Prepare the Chicken

  • Put chicken breasts.
  • Using a sharp knife, cut horizontally (do not cut through).
  • Season inside and outside with salt, pepper, garlic powder, paprika, and seasoning.

3️⃣ Stuff the Chicken

  • Spoon the parmesan filling generously into each pocket.
  • Press gently to close.
  • Secure with toothpicks if needed (recommended).

4️⃣ Sear for Flavor

  • Heat olive oil or butter in a pan on medium heat.
  • Cook chicken for 2–3 minutes per side until golden.
  • Do NOT cook fully at this stage.

5️⃣ Bake to Perfection

  • Preheat oven to 180°C (350°F).
  • Transfer chicken to a baking dish.
  • Sprinkle extra parmesan (and optional almond flour/pork rinds) on top.
  • Bake uncovered for 15–18 minutes, until chicken is cooked through and filling is creamy.

👉 Internal temperature should reach 75°C / 165°F.


6️⃣ Rest & Serve

  • Remove toothpicks.
  • Let rest for 5 minutes before slicing.
  • Garnish with parsley and serve hot.
