Eggplant slices: 8 medium

Salt and pepper to taste

Onion powder: 1 tsp.

Flaxseed meal: 1/4 cup

Almond flour: 1/2 cup

Instructions:

Take a large bowl and then add the onion powder, almond flour, salt, pepper and then the flax seed meal and then combine them well.

Take another bowl and the beat the egg in it and then coat the eggplant slices in the egg and the the dry mixture.
